Abstract:
Takingextractionsolutionofanthocyninsfrom Vitisamurensis asmaterials,differentfactorsoflight,heat,pH,hydrogenperoxide,ascorbicacid,metalions,potassiumsorbate,andxanthangumwereconductedtostudy Vitisamurensisanthocyanins’stability.Theresultsshowedthatlighthadgreaterimpactonstabilityofanthocyanins.Anthocyanindegradationwasobviousabove60℃.Anthocyaninstabilityintheacidicenvironmentwassignificantlyhigherthanalkalineenvironment.Thehydrogenperoxidecouldcausethedestructionoftheanthocyanins.Ascorbicacidcouldplayaprotectiveroleofanthocyanins,butlongafterthereversepromotedanthocyaninsdecomposition.Fe3+andpotassiumsorbatecouldincreasethestabilityoftheanthocyanins.Xanthangumdidnotsignificantlyinfluencethestabilityoftheanthocyanins.
