Abstract:
Effective components from Zingiber officinale Roscoe were extracted by using ethanol as solvent，and the antibacterial action of  Zingiber officinale Roscoe were studied.The results showed that microorganism likeEcherichia coli、Staphylo-coccus aureus,Saccharomyces cere-visiae, Aspergillus sp were inhibited well by the extracts of Zingiber officinale  Roscoe.The MIC for each kind of microorganism was respectively as follows：0.03125%，0.0625%，0.0078%，0.1250%；the stability of the extracting solution was well under certain temperature and pH.
