Abstract:

Using HPLC method to determine the free sugars in watermelon juice.The optimum condition was as follows：Chromatographic column CLC-NH2(M)，flow rate 1.0 mL/min，column under the condition of room temperature and the mobile phase consisted of an aqueous solution of acetonitrile-ultra pure water(80∶20).The results showed that this method expressing high average recoveries ranged from 97.88% to 99.35% and good precision ranged from 0.79% to 3.62%.Free sugars in juice can be determined rapidly and effectively in this way.
