Abstract:
The crude protein,crude fat,crude fiber,carotene,amino acid,vitamin C and trace elements and other biological nutritional components of the Ligularia jaluensis,Ligularia intermedia and Ligularia fischeri from the region of changbai mountain were analyzed.The results showed that the highest content of crude protein,crude fiber,amino acid,vitamin C,Mn and Zn was determinated in the Ligularia intermedia;the content of crude fat in Ligularia jaluensis was highest;the content of total sugar,reducing sugar,carotene and P was largest in Ligularia fischeri.The nutrition of the three Ligularia was rich and comparative complete,as a result,they were used for health medicine and food.It provided scientific basis and reference for the development of wild vegetables and their edible value of Changbai mountain.
